In over 1500 stays across the world I can't think of ever having declared more than one person when making the reservation on-line and have on many, many occasions arrived with Mrs. Dokes, and when the kids were small with one or more than one of them in tow. Never have had a single issue or been challenged by the front desk. I believe I may have called and reserved a crib in certain instances but usually just sorted out everything I needed at check-in.
