OP could turn off video, put on headphones, use the chat feature as needed and it would be little different from what everyone else is doing on their devices (streaming, listening, chatting).
It is not an informal policy, but part of the WiFi use agreement... While the FAQ is far too soft, IMO:

The Contract of Carriage is quite a bit more blunt:
Rule 21 Refusal of Transport: UA shall have the right to refuse transport on a permanent or temporary basis or shall have the right to remove from the aircraft at any point, any Passenger for the following reasons: [...] Passengers who are unwilling to follow UA’s policy that prohibits voice calls after the aircraft doors have closed, while taxiing in preparation for takeoff, or while airborne;
And I believe the terms and conditions while buying WiFi in flight explicitly disallow voice and video calling, but I can't find a copy now (and since I'm on the ground for another 26 hours I can't actually try to purchase WiFi to see what the terms in the flow are.
I for one am glad that the cabin isn't a cacophony of "Sorry, I was muted" "Can you repeat that, the guy next to me is on a loud call right now?" etc.
