I'm on BA123 at the weekend, so have been keeping an eye on what its time keeping has been like. Looking at todays flights BA127 (the 14:15 departure to DOH) took off heading west and then did a left turn and went out over Gatwick. BA123 (the 15:30 to DOH) took off from the same runway but turned right and went out over Stanstead and Ipswich (currently flying over The Hague).

There are literally dozens of variables. As you mentioned, departure runway is one factor early in a flight, but then you get into flow restraints through geographic areas, weather, other traffic, etc.
