Whether you are offered that option depends, I think, on your having checked in on the website (rather than the App). The App now checks you in in one go. At that point, you can either collect your boarding pass or not. You can't change your seat, once checked in.
I should confess, however, that the chopping and changing of the IT leaves me without confidence that I know all the check-in pathways and options.
