Some of the points above are fair others may have happened but are not typical, and one is either made up, or the OP wrote something terribly wrong.
They served you ham and cheese, did they? I would be surprised as that would be the first time in almost a century that TK would have served any sort of pork product.
Then again I am used to people describing the Bosphorus as a "river".
I should note that while TK could have more proactive drinks service in ALL cabins, I have never received any umbrage from any FA's when asking for whatever drinks I have wanted especially when flying upfront. I should add that generally water IS the one thing that they are proactive with, including serving it with my meal, when I have not requested nor asked for it, and on longer flights FA's will at times serve water and juices from trays unprompted by passengers.
Regarding the rest, debates about window shade controls on newer a/c can be witnessed on every single airline FT forum. Regarding Austrian Airlines, I have flown them many times bet VIE-IST. TK wins the contest hands down (and currently means nothing as OS has not served IST for several years now, maybe they will again in 2-3 years). Regarding long haul, even if OS has the best Biz Class in the World, would that be on ALL EIGHT of their long haul aircraft serving I believe SEVEN long haul destinations currently?
Then again TK's drinks service has always had issues, generally their drinks selection is not extensive, there will be a beer brand or possibly two, there will be two wines, and there will generally be one of each hard spirit, a whiskey, a vodka, a Gin, and that is about it. On long haul flights there will be one or two things like Bailey's (and I mean that as their brand is "Irish Cream Drink" or some other similar name, although the bottle looks like a Bailey's bottle. This unfortunately is the product of 3-4 different factors, 1) That 99% of Turks are Muslims they supposedly do not drink, the reality is though that 2/3 do in fact drink as Turkey is still a secular country (of this 2/3 half drink in public proudly, the other half drink in secret), however this leads to issue number 2) Until 20-25 years ago Turks knowledge and experience of alcohol was very limited, all legal booze sales were regulated by Tekel (which means "monopoly" in Turkish) and Tekel made its own spirits, The only Vodka widely available in Turkey was named "VOTKA", The only Gin was named "Cin".....you get the idea, there were illegal, then legal imports, but were far more expensive, which leads to 3) The average middle aged Turk has a very limited alcohol palate which leads to 4) TK despite now being primarily a connection carrier, where Turks are most often minorities on international flights, the management is not very pro-booze politically, and this leads to both ignorance and a willingness to save costs by serving less booze diversity and frequency.
Regarding food quality, it is more hit and miss than it was before Covid, they is no way to sugar coat that, it is a fact.
As for the crews, they are just as hit and miss as any other airline. That being said, I still think that AF and IB lead the pack in crews diappearing to the galley for most flights, of non Euro carriers AA is not too far behind.
