Kinda. To get from TPE to Grand Hyatt you'll need to ride both the Taoyuan (Airport) MRT and then connect to a city MRT. While you can use credit card for Taoyuan MRT, you can't with the next one. What you can do is to buy an EasyCard at TPE airport

Using EasyCard in Taiwan: Everything You Need to Know - Taiwan Obsessed

As you’re walking into the Airport MRT station, watch for the EZfly counter, which sells TWD 300 EasyCards (100 deposit + 200 for spending). They even take credit cards – the only place in Taiwan I’m aware of that you can buy a pre-loaded EasyCard with credit card, besides ordering one on Klook.

200 TWD should be enough to get you to your hotel one-way, and you'll need the EasyCard if you plan on using city MRT while in Taipei anyways

BTW Late to the subject, but either TPE terminal has Bank of Taiwan ATMs, and they don't charge fees - I got pretty close to Google rates using no-fx bank (TDBank US and EQBank Canada) cards
