As above, Waipara Valley is in my opinion quite underrated and produce some lovely wines. My favourite in the region is Georges Road Wines - small, boutique vineyard and the views are breath taking - pics below from 4 years ago when I first discovered this absolute gem and had the whole place to myself during the last visit . A little further up the road is Waipara Springs Winery but it is more catered towards large groups but still a nice setting to have a sit down lunch and wine pairing.
As someone into both hiking and wine (and partner only the latter so similar situation to yours !), I will also recommend the
Godley Head loop trail up to Scott's Cabin - great views across the bay. The hike takes about 2.5 hours return and there are basic shower facilities available down at the car park if you need to shower and change before heading out to do wine tasting, lunch etc.
Having also been further up to the Marlborough region, my fave is Framingham (a very interesting / themed vineyard) in Blenheim. But Blenheim is a destination in itself and I would dedicate 3 - 4 days if combined with a hike (or multi-day) in Queen Charlotte Sounds.
Lastly, if you are in the Nelson area, do check out the tiny seaside town of Mapua. We spent a couple of nights there after roughing it out for several days hiking and camping in the Abel Tasman National Park and it was a welcome respite.
