As you say, giving a gift at the end of the flight could be seen as a tip for "Service on this flight has been great, so as a result, I'd like to give you these chocolates for the crew to share." On the flip side, giving a gift at the start of the flight could be interpreted as "here's some relatively pricey chocolate for the crew to share, so as a result, please work hard to ensure my comfort" *wink*wink.

And again, it doesn't matter that you say you do not expect something it return, the crew may still feel some obligation to provide a better service to you.
