Regarding flexibility, you are right. If the upgrade request goes through, flexibility is dead.

I just checked. CDG-ATH business class June 20th - July 20th is 876€ return.
8 flights are 656€ / 744€ / 840€
IMO the Aegean Pass remains an excellent deal, considering that out of 8 flights I would certainly be able to upgrade 4 with coupons.
But as you may realized I was referring to the low season. If you do hight season travel on short notice, the pass is a good deal - but I never do. Greece is nice without tourists.
