It did taste as just a plain carrot. Nothing wrong with it but pretty bland by itself. What I mainly don’t understand is having something cold/frozen as an amuse bouche/opener. I believe sorbets of these type have only a place as a palate cleanser between different courses.
on a second note I will also say that the “Potato dumpling with umami broth kale and truffle cream” was okay-ish. It did taste good but lacked character. No “umami” or fake truffle flavor additives could be noticed. It felt like it was missing something (not the “truffle”. only the real grated kind is acceptable)
The fregola with cod was great
