We aren't big wine drinkers so it's one of those things that we would go if it's free, but not go out of our way to pay for them (since, as you said, they have gotten quite expensive). Granted, I did reach out rather late (like the 3 days before my stay), but would've been nice to let me know they ran out of reservations.
I also stayed on a Friday - if you just came back, maybe a weekday vs weekend thing?
The concierge asked what price point I was looking for and I specifically asked for complementary tastings. What’s unusual was they first gave me a list of roughly 5 wineries with complementary tastings, but didn’t include the two that I ended up going to. Those became options the next day when I called back to finalize our schedules.
My tastings were on Friday and Saturday.
