I've sailed on Celebrity a lot. The problem with this line is that when Royal Caribbean took over they focussed more on passenger revenue than the passenger experience. The appointment of Lisa Lutof-Perlo an ex Royal Caribbean exec is where it all started to go wrong as Celebrity X was in affect 'Royalised'.
I'd agree food, beverages and service now have more in common between the two lines than differences. Celebrity is a little better, but only just.
Their Retreat class offering is a step up, though whether or not it's worth the money these days is a completely different conversation. That said, if you wish to sail on their Edge class ships, Retreat class is the only way to go as you'll have full ship access and the dedicated suite restaurant is nicer than the MDR.
It's not however a luxury line like Crystal, it's sister line Silversea or Regent despite the marketing BS they put out.
