You could upfare to the non discount economy fares, which gives you more selection. But that's typically not cheap (like $100+ per person).
DOT is looking to pass this regulation, but it won't be anytime soon (oct 2024 deadline for comments , and then more time to review/propose, incljdes foreign airlines. But it only guarantees child seating next to parent not guaranteeing all 3 together).
