(these are both "nicer" HPs, FWIW)

And overseas I've seen much better variety, such as at the HPs in Aruba and Cabo (SJD).

I doubt there is much demand at all for the lunch/dinner hotel food at standard US HPs. The standard HP guests appear to be simple overnighters (who wouldn't be around for lunch anyhow) or low-budget longer-term guests (who aren't likely in the market for $14 chicken sandwiches -- or a refreshed equivalent -- in the first place). But maybe someone has the stats, would be interesting to see.
