In the US, quality is far less consistent, obviously, which generally goes with the truly awful standard of food we eat here overall. I mean, you can get a decent meal from a convenience store in Japan or Korea, pretty much every hole in the wall or takeout place is good in Italy, France is less consistent than Italy but still the majority of places are decent, etc. (I actually believe a large reason why we have such a low longevity in the US is due to our terrible quality of food). But, there are good hotel breakfasts here - even excellent. Thinking of some memorable ones ... the Seabird has superb breakfast (and lunch and dinner), the Park Hyatt NYC, the Beekman, and the Thompson Central Park all have excellent breakfasts. In my opinion there are a number of others I prefer over the SOMA, but those are less obviously superior. The SOMA to me is in a tier just above the Hyatt Place - reminds me a bit of the Hyatt Regency Portland, also just "OK" to my taste.
Well if you are comparing it to any and all available hotel breakfast, then I think you should also consider what you paid for.
Rooms at the examples you stated (PH NYC, Beekman, Thompson Central Park) are way more expensive than the HR SF SOMA. And those hotels are also in a higher tier than a Hyatt Regency.
And comparing non US properties to US one is again a bit of misnomer.
