YMMV though since I think the book and cancel trick isn't really supposed to count as activity.
I booked a future stay and canceled it, and made a points claim for the IHG One Rewards Dining (OpenTable), and the rep mentioned the standard 4-6 weeks but also noted my points expiration was Aug 30 2025 - so the points reservation / cancelation must have worked here
