If price isn't an issue, I'd look at the Mohonk Mountain House in New Paltz. It's a gorgeous property with spectacular scenery. There may be weddings or the like, but it's large property so you can probably avoid it.
For non car access, you can take Metro North to Poughkeepsie and a cab / Uber to the property.
