Trying to avoid all noise anywhere in or near NYC seems like a tough order. Especially if you plan to sleep with the windows open. And of course you never know whether you'll get an inconsiderate guest in the room next to yours, or if there's some wedding or something going on that weekend.
Anyway, the Hudson Valley in Upstate NY is gorgeous, and parts of it are reachable by train from Penn Station NYC. The foliage should be at or near peak color those dates too, so that's another point in favor.
There are some lovely hotels in Rhinebeck, which can be reached by taking Amtrak to the Rhinecliff station and then getting a cab. Here's one:

Hudson is another lovely town just one stop north of Rhinecliff on the train. It has lovely accommodations, but it's one of the more (quaintly) urban towns in the region, so you'd be looking out at buildings, and there are definitely bars in downtown that might make noise.
Catskill is another possibility. It's very similar to Hudson but is on the west side of the river (so no train), and as a result it hasn't turned into quite the same haven for expatriate Brooklynites as Hudson has.
Any Marriotts you'd find up there are going to be lower-end properties, most likely built alongside a local highway. To meet your criteria you'd almost certainly have to go with an independent, boutique hotel or B&B. You might also consider an AirBnB, as you can almost certainly find something in a more remote location that way.

The Wick. I'm sure it's gorgeous, but it's located right in downtown about a block from the train station. Depending on the room, you might get a sweet view of the Hudson River, though.
