Yes. Use the multi-city holiday booking tool but add the intermediate stops as individual stops - you can have multiple legs on the same day. This is how I managed to book a MAN-LHR-JFK-MIA-LAS (and reverse) as a holiday booking. Just bear in mind that you can only enter 6 legs and sometimes (quite frequently actually) it might shove you in economy on one leg, which might necessitate a call.
To my knowledge no. Google flights allows you to search from a specific origin to "anywhere", but ITA doesn't (although happy to concede to those with better knowledge). I really want the functionality of anywhere to a specific destination, but that doesn't exist either (to my knowledge).

I tried to do the following as individual flights but it didn’t like it, whereas ITA would let me book it with AA:
DUB-LHR
LHR-LAX
LAX-LAS
LAX-LHR
LHR-DUB
Perhaps the missing LAS-LAX is causing a stink. I wanted to rent a car, you see, and drive between the 2, but perhaps I’ll try with the missing leg and see if that works. It could also be something else I’m doing wrong!
