Blumie had some great suggestions in there. Re: Acadiana in particular, I have spent a lot of time in the area and highly recommend just driving around aimlessly while based in Lafayette. If you want restaurant/food suggestions for the small towns, I can give you plenty! There are great small-town festivals in that part of the state in the spring (Crawfish Festival in Breaux Bridge, Boudin Festival in Scott, Dewey Baldacchini Week in Eunice, and Cracklins Festival in Parks are just a few examples) plus the larger festivals in Lafayette (Festival International the last weekend in April, Festivals Acadiens et Creoles and Blackpot Festival in mid- and late October respectively).

Skip Baton Rouge unless you have some real reason to go there. The traffic is very unpleasant and the town is…not compelling.

There is a whole other part of the state above the I-10 corridor that really ought to be more interesting, but kinda isn’t. It is often referred to as “south Arkansas.”
