Great summary, I would just add that the key payouts to watch (at least IME) are the 3-of-a-kind and full house. If the 3s pay 1:1 I'm outta there. Similarly, it is hard to find 9:6 payouts esp. in popular locations - I often see worse. It's like 6:5 blackjack payouts - it doesn't sound like a big deal but it really boosts the house take.
