there will be a regular service with trolleys after departure. however you can choose to skip and have dinner later during the flight . when you get served later in the flight they won't pop out the trolley again for you, but you can order the trolley items from the trolley menu (in case they are still available)
From what I recall, the late night long haul departures I’ve had ex-IST didn’t have the starter or dessert trolleys, but rather you could choose between 2 pre-plated starters and/or soup and a wide variety of pre-plated desserts. Still very good food and service imho and yes, you can have your meal later on too in a dine on demand fashion. I think the trolleys are only used on non-late night flights.
