It depends on what time period you are referring to.
Remember that from Feb 2021 to Q3 of 2022, United's entire fleet of 772 with PW engines were grounded due to incident over Denver in Feb 2021. Prior to the period (also before Covid), 772s were on a number of scheduled SFO-EU flights.
During the grounding of 772s, 787s were used to fill the gap for over 18 months. UA were able to use to 787s due to slower travel recovery on Transpac routes. UA used to run up to 10 daily flights to China from the US that got reduced to one flight per day, and there is also low demands to Japan to allow UA to reallocate the 787s to the Transpacific routes.
UA has plan to replace the older 772s with 787-9s in the next a few years, so you will likely to see the return of 787s on more SFO-EU flights.
