Fortunately, this cancellation is covered by insurance, and they will reimburse me when I can document the FFCs have expired unused. Now wondering how I prove they've weren't used before they expired. Will the expired FFC show up under my account? Or is there some other positive indication I can obtain of their lapse?

Besides what has been suggested, you can find your trip in "recent activity". Once you have a record locator, UA should be able to find everything associated with that record locator.
