I usually wait for the Black Friday deal and then book a Winter getaway to Greece from Belgium.
Winter is fairly cheap, high chances of upgrades with the vouchers, good promo's from Black Friday and a getaway from the bad weather.
This took me to e.g. Kos, where I had 16°C and sun during February or Ioannina for hiking last winters.
