It's obviously fine regardless, but it's unfortunate to pay the premium and receive an economy level meal service.
My father flies D1 often and has gluten sensitivity (among other allergies). With all of the options Delta offers for pre-select he has taken the tactic of looking at what is offered and if nothing looks good then going with a GF meal. He has had the "simply prepared" chicken that claims to be without common allergens and liked it. The only issue is that the rolls are not GF but he does not mind the excuse to have fewer carbs. He has also enjoyed their entree salads that they have had on some flights.
