Not only do I applaud and thank you for standing up for yourself and refusing to switch seats - please go a step further and file a complaint against the FAs on this flight for their completely unprofessional behavior.
They should have asked ONE TIME and if you said no, told the other passenger the option was not available.
We always book window/aisle combos in coach, and depending on the person in the middle seat, we will keep our selected seats, or move a larger person into the aisle seat so we have more space. We give them the choice that we want, not what they want.
