As long as it is coded appropriately then it ought to work? The Resy credit does not need to be consumed all at once, multiple qualifying transactions up to the limit within the relevant period (monthly for DL, semi-annual for Gold) should all be credited.

I would be very skeptical, esp. since Paypal handling probably means 3rd party fulfillment and/or won't code the same way as an on-premises purchase. But if it's a place you regularly dine at anyway or can rationalize, seems worth a small test case to find out depending on what the minimum amount is...
