If you want to earn points on Iberia, look at the Iberia website. If it is not there, it is not there. Not sure why wouldn't you stop then.
One world does not have a partner with south America focus, so OW airlines have agreements to sell connections to non ow airlines via codeshares.
For example, AA sells tickets departing the US to Cuzco with a connection on Jetsmart sold as an AA flight, which earns AA points. Iberia will sell you a Madrid to Cuzco with a Latam final connection marketed as IB.
If you buy point to point within South America directly with the operating airline you will not earn points with any OW airline. For internal South America trips, you are better off with SkyTeam (Delta, LATAM) or Star Alliance (Avianca, Copa, United).
