The Hyatt properties in Oceanside are interesting. Seabird and Mission Pacific are side by side, across the street from each other. Both face the water and the beach is a broad, sandy one. Mission Pacific has a Michelin starred restaurant. Oceanside has an up and coming food scene so you are not confined to the hotel. I don't think either has fully developed luxury service but that is challenging to find in the US. There is a lengthy thread on the properties in the Hyatt forum.
