If you want to hold off on choosing, you can always choose the "Bank for Christmas" option or just keep declining to use the points at the check-out until you know you want to convert them, at which point it's an instant transfer to Qantas.
......why would you even choose the bank for Christmas option??? As you suggest, just keep saving the EW points until you want transfer to QF...unbelievably, much bad advice on FT even on the most elementary of matters...
