The patty, handformed, is made from a 1/2 pound of never been frozen, freshly ground chuck steak. There's a lovely dark char on the underside of the griddle toasted bun. The pickled jalapeno slices, extra crunchy and extra sour-hot, taste great with the mild American or Swiss cheese, the mayo and mustard, and the piled-on lettuce, tomatoes, and onions. Everything about the Jalapeno Cheeseburger at Christian's Tailgate Grill & Bar in Houston is paradigmatic, right down to the artful way it's presented - wrapped in tissue paper and nestled into a basket next to hot fries.
