If it is, in fact, an A320, then it will be a little more legroom and pitch, middle seat blocked off, and a meal that you select from a limited menu. Service tends to be better (flight crew have always been very attentive the times I've flown Latam PE), and the food is a couple ticks better than regular economy. One nice thing about their PE product is the reserved overhead bin space. Latam tries to gatecheck the majority of carryons. When flying PE, that doesn't affect you. Which is a big timesaver if you're not checking bags.
Two further questions:
1) When you say a limited menu, like a buy onboard menu that is free in PE, like what might happen on Scoot or more like Euro Biz which is more business class catering with potentially a menu, served on real plates with metal utensils.
2) Do you happen to know if LATAM Colombia participates in TSA PreCheck, a very old thread from 2021 said some LATAM subsidiaries do and some don't.
