I know from experience on QR J there's a reasonably good chance and they're happy to issue subject to availability. But ultimately it's subject to how much the airline loads on each flight...
No definite answers here. It is a hit and miss. Normally if they serve by tray, they would have appetisers and desserts more than minimum, so leftovers are possible. Not so sure about the main meal since also the crew sometimes take leftovers (not sure if they are allowed in TK, but on other airlines they do take it).
