Going off my experiences with JAL and the images seen here it should be a 2-3 course meal. I don't see a way it could be served in one tray considering the size of the first course itself being quite a big box of food.

I'm going to guess (once again from JAL) that the first course is the Irodori Gozen which is a box of cold selections and the 2nd course would be some sort of Japanese entree with rice and miso soup. The dessert will be as usual with AA Business class I believe.
