you are absolutely correct on that and here's the thing both Airlines have identical models if you want to fly a premium version of a Philippine Airlines A359/A35K B77W A330-300 A321neo fly CX.
From what I told you in the private message both Airlines will tend to throw exact models of the following types on HKG-MNL. When I asked a Taiwanese and Hong Konger between Philippine Airlines local spelling for them is 菲律賓航空 vs Cathay Pacific 國泰航空 on HKG-MNL. They would simply gravitate towards the more premium version CX.
one thing about the Manila layover if you have someone to pick up over there then your final destination is KIX/PER from EWR/JFK then PR127 to PR223 works out. For my mother she did PR127 to PR408. She enjoyed it and the latter of which lacks a Japanese competition which surpassed PR product.
MNL-PER has competition in the form of Singapore Airlines via SIN CX via HKG MH via KUL and QF via SYD. In the case of the Australian flag carrier you would be clearing customs in Sydney QF20 then QF SYD-PER as domestic.
