If your bags are checked through, you won't have to enter Japan. If they're not, then you do have to enter Japan. Also, there's no guarantee that SHA-HND arrives at T2. The arrival terminal can be T2 or T3, depending on where your aircraft is heading to next, and you'll know for sure a couple hours before arrival.

I would not feel particularly confident that ANA will check in across separate tickets to Delta. So you'd need to plan to be able to enter Japan, based on your passports requirements. If you go carry on only, no issues in staying airside or transit on separate tickets.
Reporting back, ground staff at SHA (non-ANA employee) did check my bag interline to Delta, so I did not have to enter Japan at HND. The bag arrived safely. The only downside is that they couldn't put a priority tag on in SHA since I was flying Y for that portion, but the bag came out surprisingly quickly at HNL, even before I reached the carousel.
