At least for domestic flights, the current cutoff appears to be 10AM for starting "Lunch". I don't know if that may have changed, but also perhaps Polaris has a different cutoff given the relatively more extensive meal service it offers.
Tangential pet peeve: given that they pull from the same pool of dishes for lunch and dinner, it seems silly to distinguish anything other than breakfast and not-breakfast.
