A lot of middle eastern cities really come alive at night because of the heat in the daytime. I think that's a good case for the 7:30pm arrival.

No need to get back to the airport super early, it's a tiny airport and not very busy. I've never encountered a queue to get through security and immigration, though security is quite picky so be ready for a couple of scans if you have a lot of electronics like I typically do. I basically just disassemble my whole bag these days at AMM and put everything in a tray, saves a lot of time despite the hassle of repacking. With your planned 2 hours, that's PLENTY of time, especially if you're already checked in from the previous flight. Myself I'd cut it to max 1h30m, trust me that airport is quite boring, but the lounge food is likely better than what you'll get on board, RJ's food is pretty sad in business class.
Thank you for the information and advice. I will be on an award ticket, so won't qualify for free hotel. As I would be paying for the hotel, it need not be the Airport Hotel; I can be more free in my choice. In a way, it is too bad that almost all of this transit is during the night, otherwise I would have looked forward to seeing a little bit of Amman. Maybe another time I can plan a true stopover for 3-4 days. In the present case I would realistically only hope to get some dinner and sleep. Even for those limited purposes I shall try for the 7:30PM arrival as you advise; clearly better than midnight.
