Amex Plat is a perfect example because it is the only options for Amex airport lounge access (well, there are cards with higher AFs LOL) So I tolerate the montly coupon book nonsense because I value the lounge.
What perks does Amex Gold provide that you can't get elsewhere? None that I can see. Monthly credits are not perks they are simply a way to recoup your AF (we can all easily buy uber or grubhub or whatever directly as needed). Many other cards bonus restaurant spend, and to a lesser extent groceries. Gold will see massive attrition unless they make it special for something. At this price point it's getting close to Cap1, which now has lounges.
For me the answer to this question is that you can't get 4x on groceries elsewhere. I usually spend closer to the $25k cap annually on groceries so that's an extra 25k points for me above what any other cards would give me on groceries. Even if valued at 1 cpp it's $250 but I certainly value the points at higher than that so for me that's the perk that drives me to keep the card even though I have zero use for $7 Dunkin and will find it hard to use the $50 Resy.

I understand that most people probably do dine out at high end restaurants at least twice a year anyway so can easily use $100 at Resy, but that's not us. We like staying home and cooking our own meals and here and there we will order take out from Uber eats using the monthly Plat and Gold credits.
Also, I'm sure that a meal at a high end place via Resy is going to cost us a lot more than just $50 for 2 of us so I don't even feel like I'm saving anything by using the credit as I'll be spending money on a meal that I otherwise wouldn't have spent money on. So at the end of the day I would probably skip the Resy credit and that wouldn't be taken into consideration when justifying the AF.
