Except it’s short rib, which should never be prepared black and blue. I’m genuinely curious what the intent was when they came up with this dish

Agree there's no way they're serving short rib seared on the outside and rare in the middle.
I decided to take a gamble and choose the “Black and Blue Short Rib.” I’m not that familiar with black and blue, so I can’t speak to what makes this dish so described. There’s nothing charred on the outside nor rare on the inside about it. The whole thing was cooked through with only a hint of warm color inside. As you see from the photo it doesn’t look all that pretty. That said, the short rib was very tender, perfectly seasoned and flavorful, and I would 100% order it again if it were offered. Indeed, there is a topping of blue cheese.
Also pictured is the somewhat sad appetizer of an artichoke with burrata, plus a slightly wilty salad with strawberries. This was from a flight last month and I had forgotten to follow up with photos until now.
