My suggestion is that if the nights matter to you still, then your first hotel needs to fix the Folio, then Marriott customer support will be able to help almost as a new problem. So I would be emailing or calling the Fairfield Tustin directly to see if they can either reduce the number of nights to 2 (which you stayed) or (even better but probably inaccurate) to 3 nights (that you paid for) and issue a new/correct folio. It does seem a bit like they thought they thought they were doing you a favour and giving you 3 nights or were trying to easily manage the late arrival, but in the end it hasn't worked out helpfully. With your new folio, Marriott can then fix the first stay, which would unblock the second stay.
At the end of the day I would guess that Marriott support will rely on the folios (that they can see and verify) rather than things like boarding passes, and are more likely to believe the hotel than you in terms of accuracy. You can try to message
Marriott Bonvoy Lurker III with all your details as an escalation point, but I honestly think unless the Fairfield fixes it, it will be hard.
The multiple overlapping nights not being allowed to be posted is a well known program "feature" that they won't be able to fix/change for you - even if you cross the international date line!:
