The onboard menu will be the same as offered for pre-order minus menu choices that for some reason have max'd out, so if you wait you will end up rolling the dice with - possibly - fewer choices overall and - definitely - in line behind any elites who hadn't pre-ordered (hope you like pasta). It makes no sense to not pre-order. Then, as pointed out above, eat in the Polaris Lounge anyway.
