We also live in Tokyo and share your enjoyment of being spoiled by JL and NH -- but since we also live in NYC we get a chance to fly other airlines and realize how good we have it - especially since both NH and JL have their new hard product -- which are both amazing...
Unfortunately you have very limited options for direct service at the service level you desire since they are mainly EU based airlines. I can tell you the other airlines that you've mentioned are clearly a cut below for food service. My wife and I travel to SEA regularly and we use SQ which we think is close in quality to NH/JL. TG used to be better and we can't recommend them now. As you mentioned the Korean airlines are probably the next best options (in terms of convenience and time) -- but still a step down in soft product quality and adding a connection is always more risky.
TK is another possibility -- but given the potential LGBTQ issues you probably would like to avoid just like with the ME3.
I do believe that AF have a great F product and service / food -- but we haven't flown that in years and the cost (used to be) significantly higher and not sure it is on any routes to Tokyo. LH and LX in F are really nice -- but once again the connection is required -- but we've found that purchasing a J ticket and then "bidding" for an upgrade to F has worked well - but not always...
I guess I'd suggest enjoying JL and NH -- we are always very grateful to fly them as we often use UA -- which is like falling of a cliff from a soft product perspective...
