Thank you for your exhaustive reporting HadesNL , I would add Le Garet to your bouchon list. I had one of the more memorable meals of my 10 year residence in France (lived in Paris) there. Was dining alone, chef started talking to me (I am french canadian so they always notice my accent), we started talking about rugby and next thing I know I am just being fed non-stop for 3 hours. I returned with my brother a few years later and he remembered me, second time was just as good.

Leaving this as a (slightly off-topic) reference for people reading this thread. I personally like seing restaurant recommendations in the hotel threads, I have discovered many good ones from advice contained in them.
