I don't want to beat a dead house here, but they will make whatever you want in an omelette in Rossini's and in Orchid Cafe. In Orchid Cafe, I've had them make me LEOs, but I brought them the smoked salmon on a small plate from the buffet to make it easier for them. They were always happy to do it, as long as we were able to communicate what I wanted.

Also, again with the dead horse, they have 3 different menus at Rossini's and when I was there last, they rotated the menus every 4th day. Some dishes are only on one of the menus, but for things like the steak and eggs and possibly the Alaskan Salmon, you can ask for those on any day. I don't know if possibly that is just something that they do for certain guests or not, but you can always chat with one of the managers like Sumit (Rossini's but recently promoted I believe) or Chanida at Orchid Cafe and they will take good care of your requests if it's possible. For example, in Rossini's, if Eggs Benedict is on the menu that day but you want Eggs Royale and it's not on that menu, they will happily do that for you, and vice versa.
