I don't think it is a case of AVH not liking the 787. At Austrian Airlines they ran quite a few widebodies under his leadership. It is really a case of it being a tough industry to make a profit in and the competitive environment WS has been in the past few years has made if difficult to expand the widebody fleet profitably. An interview relating to the original announcement he made in 2022 had a quote on widebody operations for WS "It’s an opportunistic business and we do it as long as it makes sense":

AVH is here to cut everything to the bone and take WestJet and its pieces public. ONEX wants out and AVH is their guy to do it. He has zero interest in the long term profitability of WJ only what makes it appear to be profitable short term. Given how terrible this executive group has been at managing the people and public the only way I see WJ regaining any sort of trust (both internally and externally) is for them all to go. Every CEO is hired to do something (Clive -> Durfy -> Saretsky -> Simms -> AVH) and the next guy will be brought in to attempt to rebuild trust.
