Regarding hollandaise, I've learned over time that in SEAsia, the standard recipe for hollandaise is different from what we know in the U.S. There's no lemon juice added to the egg yolks and butter. Since the hollandaise sauce originated in Normandy (originally, "Isigny sauce"), I confirm that it is supposed to be generously creamy.

I'm glad to read that I am not the only person that is annoyed by people using the speakerphone on their mobile phones without headphones in shared spaces. When people were using portable radios, I don't recall seeing people using them in restaurants, hotel pools, gyms, airport lounges, etc ...
On this recent trip, I noticed an increasing number of "Do not" or "If you remove ... you will be charged" signs in the hotels.
At the SGS, the staff will ask the obnoxious guests to turn off their speakerphone, if it is brought to their attention, but rarely do it on their own.
