I have just kicked off the Wikipost to this thread. I kept it somewhat general because I doubt we're going to update it very often, but it could definitely benefit from a little more substance. In particular, I don't know much about the best HK and other non-Mainland SIMs/eSIMs, but some of you guys do, so maybe we can mention a few of the better ones, especially if they are likely to remain in business for the foreseeable future. If you have trouble editing the wikipost yourselves, you can post here and one of us will attempt to update accordingly.

ETA: I forgot to mention that we can also request to have this thread retitled in order to reflect its slightly broader scope (suggestions, welcome!). I do think the VPN thread deserves to continue its independent existence, but since that topic comes up all the time in the SIM/internet conversation, I wanted to preemptively address it here too.
