I have seen numerous reviews say that Premium Select meals are not all that different than the meals that they serve in standard Economy.

I have seen reviews from as recently as March of 2024. Is there any reason to believe that the Delta Premium Select meal quality has improved at all?
There were some catering improvements made back in March (including ability to pre-select meals) -- https://pro.delta.com/content/agency...-heights-.html

You can see menu options for most PS routes now here - https://menu.delta.com
The PS main meal options come from the D1 (not coach) menu options on flight.
There are a number of existing threads floating around on PS (although most of the reviews are from pre-March changes) --
